Hotel Breakfast Menus from Kelloggs Food trends are almost a flavor-of-the-month. Some are real, and some are just fads.

“There was relief when the Atkins Diet didn’t turn out to be everything it was supposed to be,” says Brad Nelson, VP, culinary and corporate chef for Marriott International in Bethesda, Maryland. “The trans fat issue is really representative of the overall concern with wellness,” he says. “There’s more knowledge about foods and ingredients and more personal involvement with menu choices than ever before. People are demanding more information about food—whether it’s considered healthy or not.”

Even the most ardently health conscious don’t count calories all the time, however. “People fill a piggy bank with good eating choices,” Nelson says. “Then they cash it in when they want to indulge in a treat.” Even then, what’s required is the information to make an informed decision. “There’s a demand for better quality products—better ingredients for breads, croissants, and pastries. People are saying, ‘Give me less, but make it better.’”

“Nowhere is this focus more apparent than with the interest in healthy breakfast choices,” Nelson continues. “Kellogg’s Smart Start products are excellent, and their acquisition of Kashi is in line with the public’s demand for knowledge. A Kashi eater may eat it for three days, then want Frosted Flakes on the fourth day. It’s about choice, and through knowledge, better choices about the foods people eat.
