“In the summer months, we brew and jug our own tea each morning, and we needed a machine that could produce a high volume of ice within a few hours, but still have enough ice to sustain the needs of our customers for the rest of the day. When we’re making the tea, we use from 60 to 100 pounds of ice before the restaurant even opens—the Prodigy has been able to withstand that kind of volume and still keep up with the demands of the day.”
Gamache also likes the Prodigy because it’s compact. In the past, Gamache had to use huge 500 to 800-pound ice bins to support his iced tea brewing and other beverage needs, but because the Prodigy can manage such a high volume of ice, Gamache saves space with a machine that’s half the size of his old one.
“We’ve never had a problem with the machine,” Gamache adds, “but if we did, we’d know through its self-monitoring system before it’s too late. You don’t want to be stuck telling a full restaurant and a line of cars in the middle of a July lunch rush that you’re out of ice—not fun!”
