“It’s by far the best seller on the menu,” says Bryan Monfort, vice president of operations for Lawry’s Restaurants Inc. “A segment of our guests looks to us for a recommendation about what they should drink, what will pair well with our prime rib. “Initially, we chose the Round Hill Cabernet Sauvignon and Chardonnay,” says Monfort. “Later, we added the Merlot, which is much softer and more approachable for those who find Cabernet too strong. The Round Hill is a very consistent product. Over time, all three varietals have maintained the same flavor profile. They’re very drinkable, case after case, right when it comes to us.”

“At this case count, lots of wine vendors have come to us,” he adds. “We’ve done blind tastings, but we keep coming back to Round Hill because of its consistency. A large percentage of our guests come four or five times a year to celebrate special occasions. They’ve come to know and appreciate the wine. At Lawry’s, we want to provide good quality at a good value. Our private label product absolutely fulfills this.”
