With four thousand rooms, 465,160 square feet of banquet space
and a half million covers served each year, it’s easy to imagine how
much cooking and transport equipment The Venetian needs and
the organization required to execute such a staggering volume of
food preparation and delivery.
“It’s like an ant hill here,” says Duane Welch, The Venetian’s
Executive Steward, “and once the rock starts rolling down the hill, you
have to make sure it’s going where you want it to go.” That’s where
Cres Cor’s banquet cooking equipment and transport cabinets help out.
“We opened in 1999 with a complete Cres Cor package. Those
original units are still on the floor, three meals a day,” Welch says,
adding that “in peak months we have four thousand to eight
thousand covers every day – all of which have to live up to the
expectations of The Venetian, and Cres Cor delivers. We’ve
served two hundred turkeys at once, and whatever we’ve needed
from Cres Cor, they’re on the spot with the right product.”
