Idaho is a glorious state, stretching from Nevada to the Canadian border, replete with
majestic mountains and clear lakes. But it's the humble potato that's often associated
with the place. According the 2004 Idaho Department of Agriculture report, the state
accounted for 29% of the total domestic U.S. potato production.
Naturally it follows that one of the worlds' largest manufacturers of potato products,
J.R. Simplot, is based in Boise. Simplot helps hoteliers with a variety of potato
products that cut preparation and cooking time.
According to David Henze, Marketing Manager for Simplot's Idahoan brand of potato
products, "Idahoan products help ease the challenges of controlling labor cost and
consistency in production. Preparation times are also cut significantly and the products
are shelf stable."
Henze also discussed the innovations that make the products taste like scratch preparations.
For example, the Idahoan Premium mashed potatoes are authentic down to the homestyle lumps
just like Mom's homemade.
Additionally "the speed of production from shelf to table gives your kitchen operation great
flexibility," says Henze. "For example, whole shredded hash browns only require a four to
five minute grill time. Or you can create four-cheese mashed potatoes in only one minute."
The products have a made from scratch flavor profile while lending a consistent product and
allowing a diverse selection of possibilities.
