Integrated Combi Ovens and Chillers » Completely Compatible
While integrated combi ovens and blast chiller systems have long received a warm reception from foodservice professionals, a fully integrated banquet cook-chill system that eliminates compatibility issues is sparking interest among those operators who refuse to compromise on quality to save time.
The air-o-system® product line by Electrolux Professional is a compatible combi oven, blast chiller, and roll-in refrigerator system in which all function together to help streamline food production processes in the kitchen, explains Scott Applebee, director of marketing and product management for Electrolux Professional North America, Ft. Lauderdale, Florida. “The banquet kitchen equipment integration and compatibility extends to transport carts, rack cassettes, and plating racks—essential accessories that serve as a bridge and save valuable time, Applebee adds.
“It’s a complete banquet food preparation system. Everything works together so there is no wasted motion,” says Applebee. “This increases food safety, reduces food waste, and cuts labor costs by allowing staff to work during off-peak times.”
Because the majority of food can be prepared in advance, last-minute changes are easier to handle, Applebee notes.
Another feature is that the company offers size compatible combi ovens that are matched with similarly sized blast chillers and roll in refrigerators. “The air-o-system® is the only product line in the market that offers this seamless system of matching sizes for cook chill equipment,” Applebee says.
Having been widely received in Europe for about five years, the air-o-system® was recently introduced to the North American market, Applebee points out.—SBH
