When Bixente Pery was offered the position as executive chef at the new InterContinental Buckhead in Atlanta, knowing the kitchens would be equipped with a RATIONAL banqueting system made it a sweet deal.
Once again, his talents as a chef and his skills at opening a property were in demand. He says he made the move because having the opportunity to work with RATIONAL's new SelfCooking Center along with their Combi-Steamers would be icing on the cake.
Using RATIONAL Combi-Steamers and the SelfCooking Center, Pery can meet the demands of a full-service restaurant, roomservice, and Buckhead's largest ballroom space, serving up to 1,600 banquet guests. These high speed thermal cooking units also help Pery achieve the kind of across-the-board consistency he says is unattainable with traditional cooking equipment.
Pery says RATIONAL's technology lets him begin banquet preparations a few days before the event, reducing required labor and related costs. Also, last minute changes are less stressful when so much preparation and set-up is accomplished ahead of time.
RATIONAL's banqueting system lets Pery and his staff plate many more food items, thus distinguishing the hotel in the marketplace.

RATIONAL was recently awarded the prestigious Kitchen Innovations Award from the National Restaurant Association for its Banqueting System. --SBH
