BUFFET WARE by Spring USA is what the hottest buffets are wearing.
Tom Brija, president, explains that travelers are demanding
better value, and limited-service properties are responding with
breakfast service.
"When adding food service to stay competitive, make sure it can be
done well or don't offer it," Brija advises. "The key is to go with food
products and service items that reduce the training and labor associated
with serving food."
Because Spring USA's chafing dishes offer an upgraded buffet line at
a significant value, a major limited-service brand with over 1,200 locations
across the United States was able to add food service affordably,
as did Sheraton's new Club Level and Residence Inn by Marriott.
An advantage gained by Residence Inn, Sheraton and others is that
Spring USA offers induction ranges in addition to its core buffet ware.
"Residence Inn uses both chafing dishes and induction for presentation
and serving of eggs," Brija explains. Spring USA's improved finish and
function certainly helped the company win a chafing dish competition.
